Very tasty salad for the winter without sterilization, without vinegar, without sugar! The recipe is simple, our whole family loves this salad. I can open a jar and just eat it all - that's dinner! I highly recommend that you try to close at least a few jars for testing.

All vegetables must be washed well.

I cut the sweet pepper into small pieces. Like these ones:

I didn’t fit all the eggplants, I put some of them in a deep bowl.

Note: I don't soak eggplants, they don't taste bitter. I have eggplant from my garden. But if you are worried that they will be bitter, then you can salt the eggplant already chopped and pour water over it. Leave for 20 minutes and then squeeze and use according to the recipe.

I cut apples into cubes and also to vegetables.

Add salt to the vegetables in a saucepan and mix.

Advice! Salt should be used as table salt.

Then I add sunflower oil and put the pan on the stove over medium heat. Immediately add finely chopped parsley (you can dill) and mix.

Vegetables begin to decrease - “extinguish”, and gradually add the remaining eggplant.

Stew vegetables for about 50 minutes, I like when everything is soft. You can also reduce the cooking time. Periodically I go to the pan and mix the vegetables.

5 minutes before readiness, I add chopped garlic (it is possible through a press or on a fine grater) and ground black pepper. Mix everything and cook for 5 minutes.

I lay out the salad in sterilized jars and twist with sterilized lids.

Products:

  • 2 kg. eggplant.
  • 1 kg. sweet pepper.
  • 700 gr. tomatoes.
  • 700 gr. carrots.
  • 700 gr. onion.
  • 400 gr. apples.
  • 10 cloves of garlic.
  • Large bunch of parsley (dill).
  • 250 ml. sunflower oil.
  • 1 tsp ground black pepper.
  • 2 tbsp rock salt.
