Homemade dumplings: the most delicious recipe

In the Urals, home-made dumplings, very tasty, enjoy special honor. A photo recipe for such a dish causes an appetite even for a well-fed person. Dumplings: cooking delicious at home

The classic dumpling dough was traditionally made without eggs. For better elasticity, add a little sunflower oil. Such a dough is kneaded quickly, but needs a short “rest”. But before you cook dumplings with classic dough, we recommend paying attention to egg. It has a beautiful color and pleasant taste.

Prepare for the classic test:

  • 0.5 kg. Flour;
  • 2 tbsp. l. sunflower oil;
  • 1 tsp salt;
  • ½ cup cold water.

Required for egg dough:

  • 0.25 gr. flour;
  • 10-11 yolks (depending on the size of the eggs).

Prepare for stuffing:

  • 200 gr. pork meat;
  • 200 gr. beef pulp;
  • 150 gr. lamb;
  • 2 onions;
  • 2 cloves of garlic;
  • Salt pepper.

How to prepare dough:

  • Cooking the classic dough for homemade dumplings. Cook the recipe with a step-by-step photo using manual or machine kneading. Measure the flour, sift in a slide.
  • Make a small well, add salt and sunflower oil.
  • Pour in water, knead elastic dough. Sprinkle some flour if needed.
  • Wrap the ball of dough with cling film and let it rest for 30 minutes.
  • If you want to cook homemade dumplings in Italian style, cook the recipe with a photo of egg dough in the car. Measure the flour. It is best to use the Italian zero-zero.
  • Add 10 yolks, turn on the batch. If the dough is lumpy, add another egg yolk. Mix into a uniform lump. Wrap with foil, leave for 60 minutes. While the dough is “resting”, gluten develops, which is responsible for the elasticity of the dough.
  • Prepare the stuffing for homemade dumplings. The step-by-step recipe is simple: pass 3 types of meat through a meat grinder.
  • Peel the onion and garlic, chop also with a fine nozzle.
  • Add salt, pepper, knead homogeneous minced meat. Place in refrigerator.
  • Divide the “rested” dough into 2-3 parts. Roll each into a thin sausage with a diameter of no more than 2 cm.
  • Cut the sausage into pieces about 1 cm long. Sprinkle lightly with flour, roll out a small thin cake.
  • Place a ball of minced meat in the center of each tortilla.
  • Connect the edges, like on a dumpling. Glue the corners together to form an eyelet.

  • Boil the blanks in boiling salted water for 5-7 minutes.
