Mackerel rolls for the festive table

Mackerel is very useful because it contains many essential trace elements and unsaturated fatty acids. Prepare rolls from this wonderful fish and serve as a hot dish or snack to the festive table.

Mackerel is very fatty, so you should not fry it in oil. It is better to give preference to baking in the oven.

One mackerel makes two rolls. Choose a bigger fish, it will be tastier and healthier. Wash the fish and cut in half. Remove the gills, bones and tail. Remove small bones with tweezers. The skin does not need to be removed. Sprinkle the fillets with salt and spices and leave to rest for a while while the filling is prepared.

For the filling, chop the onion and red pepper. Carrots need to be grated. Mince the garlic clove using a garlic press. Fry the vegetables in a small amount of vegetable oil, and let them cool. Then add garlic, salt and spices.

Wrap the fillet rolls, putting the filling on it. Secure the edges of the roll with a toothpick. Grease a baking dish with a little vegetable oil and lay out the fish. If you want the dish to be not very greasy, replace the oil with a little water. After 30 minutes in the oven, the rolls are ready. Serve them on lettuce leaves with lemon.
