To novice cooks , meatloaf seems like a fantasy dish. But what to hide, even for experienced housewives, it does not always work out. Either dry or falling apart, no stability.

Buying factory-made sausages is not recommended for known reasons. They have everything except meat! But after a long search, I managed to find a universal meat dish. This roll is great for a festive table and for sandwiches for children in school.

Juicy and soft, it will be delicious with or without filling. There is a little secret that makes homemade chicken roll perfect. It's not gelatin or useless threading. The main thing is to take the right meat! The best fit is not fillet, from which the rolls turn out to be dryish, but the simplest chicken thighs! In addition to the above benefits, it is much cheaper.

Chicken roll with stuffing

YOU WILL NEED

  • 5 pieces. chicken thighs
  • 4 things. pickled or fresh sour apples
  • 1 st. l. lemon juice
  • 30 g pumpkin seeds
  • 50 g walnuts
  • 1 pinch dry ginger
  • 1 pinch thyme
  • 1 pinch of nutmeg
  • salt, pepper to taste

When cooking, avoid three common mistakes.

In no case do not beat the meat with a hammer. This action will spoil the meat, not make it softer. After baking, such a roll will simply crumble. Do not sew up the roll with threads or toothpicks, fold it with parchment or film. A juicy and healthy roll will turn out if you add a little water to the baking sheet.

COOKING
  1. Wash chicken thighs under running water and pat dry with paper towels. Separate the meat from the bone. If desired, the skin can be removed, but it is better to bake with it, it tastes better.
  2. Line a cutting board with cling film and lay the meat on it in an even ball. Top with another layer of cling film. Beat the meat very gently with a rolling pin, in no case do not use a hammer! This is a gentler way to prepare meat for roasting.
  3. It is best to form a roll on parchment and wrap it in a film. First, cover the board or part of the table with cling film, but don't cut it off. Place a sheet of parchment on top. On half the sheet, lay out the hips one by one with a slight overlap, be sure to skin down. Salt evenly, add spices and lemon juice.
  4. Cut the apples into slices and put on top of the meat. Sprinkle with seeds and coarsely chopped nuts.
  5. It is very important to roll the roll tightly. Using parchment, wrap the meat so that the filling remains inside. Over the parchment, wrap several times with a film, like a candy. Roll the roll on the table or plank, holding on to the edges.
  6. Place the wrapped roll in a tall roasting pan. Pour in water so that it takes up half the height of the roll. Evaporating, the water will not let the meat burn.
  7. Bake in the oven at a medium level at a temperature of 180 degrees for 40 minutes. Under the influence of temperature, the film will not spoil the roll. The water in the pan will keep it from melting. You can also use a baking sleeve, which you will need to cut to length and tie the edges.
  8. After the time has elapsed, take the roll out of the oven and let it cool right in the film. Unwrap only when completely cool.

As you can see, chicken roll at home does not require special expenses. As spices or toppings, you can use any other ingredients that you like.
