What do you know about nettles, except that they can sting unpleasantly? Well, this plant is actually high in vitamins and can be used in a number of delicious recipes. Be sure to harvest nettles from uncontaminated areas in the countryside and try to select young, tender leaves. Don't forget to wear gloves.
1. Vareniki with nettle, cottage cheese and cheese
Dumpling dough - 500 gr
Nettle - 3 cups
Cottage cheese / cottage cheese - 2/3 cup
Cheese - 100 gr.
Mix washed and dried nettles with cottage cheese and grated cheese. You can use any cheese for the filling, but it is best to use suluguni, Adyghe or feta. Place the filling in the center of the piece of dough and form into a dumpling. Repeat. Freeze the resulting dumplings for storage or boil immediately. Serve with sour cream, of course.
2. Nettle jam
Nettle - 1 cup
Honey - 1/2 cup
Lemon - 1/2
Scald young nettle leaves in boiling water. Heat honey in a saucepan, add chopped nettle leaves and simmer for two minutes. Add lemon juice and boil for two minutes. Place the jam in a jar and store in the refrigerator.
3. Pickled nettle
Nettle - 1 1/2 cups
Sugar - 1 tbsp. l.
Water - 1 1/3 cups
Vinegar 9% - 1 tbsp. l.
This unusual seasoning is ideal for first courses, salads and vegetable stews. Rinse nettles in cold water and scald with hot water. Let the water drain and place the nettles in a pre-sterilized 0.5 liter jar. Fill a jar of nettle mixture with hot water for 5-6 minutes. Then drain the water.
Then prepare the marinade: drain the water into a saucepan, add salt, sugar and turn on the fire. Once the salt and sugar have dissolved, add the vinegar and immediately fill the pickled nettles.
Then close the lid tightly, cover the jar with a towel and let it stand until the jar is cool. Keep refrigerated.
4. Nettle soup
Nettle - 1 large bunch
Sorrel - 1 medium bunch
Tomatoes - 2
Potato - 5
Eggs - 2
Dill - 1 bunch
Green onions - 1 bunch
Salt - 2 tsp
Peel, cut and boil potatoes. Rinse the nettle and put it in a separate pan with boiling water. Boil 10 minutes. Remove the nettles from the pan, cut off both the leaves and the stems. Add nettles to pot with potatoes.
Simmer for another 10-15 minutes until potatoes are fully cooked. Meanwhile, chop the tomatoes and add them to the pot.
Boil the eggs, peel them from the shell and cut in half. Chop the sorrel, dill and onion and add to the pot. Add salt and pepper to taste. Put soup in bowls and add eggs. The dish can be served with sour cream.
5. Nettle Pie
Dough - 500 gr
Nettle - 5 pcs
Egg - 1
Egg white - 1
Tomato - 1/2 pc
The dough according to this unusual recipe can be anything: shortbread, yeast or cottage cheese.
Roll out the dough into a round shape about 1/2 cm thick. Put the filling of grated cheese and chopped nettles on top. Cover with thin tomato slices. Pour in the egg white first and add the whole egg. Roll up the dough to partially cover the filling.
Bake the cake at 180°C in a preheated oven for about 20 minutes.
