Sweet lovers will certainly appreciate this delicate chocolate cake - dessert!
To prepare a dessert, we need dark chocolate, cream, cookies, coffee, cognac or brandy.
I can assure you of one thing, this cake tastes amazing!
It is very simple and easy to prepare!
Ingredients
designed for dessert 26 x 8 cm, height 5.5 cm, weight 900 grams.
180 grams - tea biscuits
80 grams - strong sweet black coffee
40 grams - cognac or brandy
1-2 tbsp. l. - cocoa
500 grams - cream 30-35% fat
200 grams - dark chocolate with 50% cocoa
Cooking method
First, prepare the cream and chocolate for the cream.
Cream must be heated to about 80-90 degrees.
Pour chopped dark chocolate into hot cream.
Pour so that it is completely covered with cream.
Wait 2-3 minutes for the chocolate to melt.
And mix well with a whisk until smooth.
It is necessary that the chocolate and cream are completely combined and become homogeneous.
This will be our future cream, cool it to room temperature.
We cover the cooled cream with cling film, make several punctures so that condensate does not collect, and put it in the refrigerator for 5-6 hours, the cream should cool very well.
Pour the chilled cream into a clean, cold, dry bowl.
Beat at medium speed of the mixer until creamy.
It turns out a lush, airy cream that holds its shape well.
Prepare the icing for the cookies.
Pour cognac into cold coffee, mix.
Put some of the cream in the form, and evenly level it.
Place cookies soaked in coffee and cognac on top of the cream.
Next, lay out the cream. So alternate layers of cookies and cream.
Cover with cling film and refrigerate for at least 3 hours to set the cream.
I usually clean at night.
Sprinkle cocoa on top of the finished dessert.
