Strawberry season is about to start! Having eaten enough, you can already make blanks. And why not treat your loved ones with something unusual this time?
It would seem that there could be something unusual: berries, sugar - that's jam for you ... But it's not! If you approach the issue with imagination, then the result will really be the opening of the season, believe me.
Strawberry jam "Freshness".
2 kg of strawberries
1.5 kg of sugar
2 lemons
25 fresh mint leaves
25 basil leaves
Place the prepared berries (washed, dried and without tails) in a deep bowl and sprinkle with sugar. Leave for a few hours for the strawberries to release their juice.
Place the bowl over moderate heat and simmer for 5 minutes after boiling. Then add the washed mint and basil leaves, cook for another 5 minutes.
Add finely chopped lemon pulp and grated zest to the jam. After that, cook the jam over low heat for about 15 minutes. Remove from heat and leave for 8-10 hours.
Second stage of cooking. Put the bowl on the fire, cook for 5 minutes after boiling, then pour into sterilized jars and roll up.
Strawberry jam "Ruby".
1 kg of smaller strawberries
200 g of rose petals
1.2 kg of sugar
100 ml of water
0.5 tsp.
lies. citric acid Place the prepared strawberries in a basin and cover with half the norm of sugar. Leave overnight.
Make syrup with remaining sugar and water. Pour the washed rose petals into it, add citric acid and bring to a boil.
Pour the berries into the boiled syrup and cook for 5 minutes over low heat. Then remove the dishes from the heat, let the jam cool completely.
Bring to a boil again and simmer for about 10 minutes. Pour hot jam into jars and seal.
Strawberry jam with spices.
2 kg of strawberries
2 kg of sugar
2 star anise
1 cinnamon stick
Place the prepared berries in a bowl (pot), cover with sugar, leave for 3 hours. After this time, put the strawberries on the fire, bring to a boil and cook for 10 minutes. Set aside to cool.
Once the jam has cooled, return it to the heat and bring to a boil. Then add spices and cook for 10 minutes.
Remove the spices, pour hot jam into sterilized jars and cork.
Strawberry jam with vodka.
3 kg strawberries
2 kg sugar
100 ml vodka
1 tea.
lies. citric acid Lay the prepared berries in a basin in layers, sprinkling with vodka and sprinkling with sugar, the top layer is sugar. Leave in the refrigerator overnight.
Put the basin on the fire, bring to a boil, add citric acid and remove from heat. After 3 hours, return to the heat and bring to a boil.
Repeat the procedure 3 more times, and after the last boil, cook for 10-15 minutes.
Arrange the jam in sterilized jars and roll up.
Strawberry jam with rhubarb and ginger
1 kg of strawberries
1 kg of rhubarb stalks
50 g of fresh ginger root
2 kg of sugar
200 ml of water
Peel the washed rhubarb stalks and finely chop. Add prepared strawberries, pour water in a deep basin, put on fire and bring to a boil. Boil 10 minutes.
Add peeled whole ginger root, a third of the total sugar and cook for another 5 minutes with continuous stirring.
Add the remaining sugar in small portions and cook for 5-7 minutes. Remove from heat, set aside for 8-10 hours.
Second phase. Return the basin to the fire, let the jam boil and cook over low heat for 10 minutes. Remove from heat again for 10 hours. Remove the ginger root from the cooled jam. Arrange in sterilized jars, cork.
This is just a small part of the fireworks of flavors that can be created by supplementing the basic strawberry jam recipe with unusual additives. Strawberries go well with herbs, other berries and fruits, chocolate... Be creative and you will definitely find your unique taste of strawberry jam!
