Pickle with barley
Offal is used for real pickle, but we suggest cooking broth on beef shank for soup.
You will need:
- 1.5 l of beef meat broth (500-750 g of beef shank pour cold water (2-2.5 l), add onion, carrot, parsley and celery roots, cook for 2 hours, salt in the process, then strain);
- 100 g pearl barley;
- 3 potatoes;
- carrot;
- bulb;
- 3 pickles;
- half a glass of cucumber pickle;
- celery root and greens;
- root and parsley;
- a couple of bay leaves;
- 5 black and 3 peas allspice.
Pour the barley with boiling water in a bowl and leave for half an hour. Change the cooled water to boiling water a couple of times so that the cereal is steamed.
Remove the skin from pickled cucumbers with a knife, put it in a saucepan and pour a glass of boiling water, cook on a slow boil for 10 minutes. Then discard the cucumber skin, and lower the cucumbers cut into small bricks into the brine, cook for another 10 minutes.
Peel onions, celery and parsley roots, potatoes, carrots, wash vegetables. Chop the onion, cut the potatoes into small pieces, other vegetables into strips.
Add celery, carrots, parsley, cereals to the boiling broth, cook for 10 minutes. Then add onions and potatoes. Cook on a moderate boil until the potatoes are ready, then add the cucumbers with brine, spices, if necessary, salt. Boil for 15 minutes, then season the soup with chopped herbs, keep on fire for another 2-3 minutes and turn it off. Serve pickle with sour cream and black bread.
Juicy meatballs with tomato
In minced meat for cutlets add tomatoes, herbs, onions, garlic. Get fragrant and juicy hot!
Ingredients:
- 500 g minced meat (pork or pork + beef);
- 2 onions;
- 2 cloves of garlic;
- 2 tomatoes;
- 50 g of a loaf;
- a glass of milk;
- a small bunch of parsley and dill;
- salt, black pepper to taste.
Dip the tomatoes for a minute or two in boiling water, then remove the skin. Crumble slices of loaf without crusts into a bowl, pour over milk and break with a fork.
Mix minced meat, chopped onions and garlic, diced tomatoes, chopped greens, salt and pepper, a loaf soaked in milk in a bowl.
Turn on the oven to heat up to 190-200 degrees, cover the baking sheet with parchment.
Form patties with wet hands and place on a baking sheet. Bake in a hot oven for 30 minutes.
While the cutlets are baking, prepare mashed potatoes, buckwheat or pasta. Fresh or pickled vegetables will come in very handy.
Autumn pie with golden apples
Lots of apples, a little bit of dough, excellent aroma, perfect taste!
Ingredients:
- 1.5 kg of Antonovka or Simirenko apples;
- 3 eggs;
- glass + 3 tbsp. l. Sahara;
- 50 g butter;
- 3 art. l. flour;
- half a spoonful of baking powder.
Wash the apples and cut into large slices (into 4 pieces), cut out the core with seeds. Cover the round shape with parchment along with the sides. Sprinkle half a glass of sugar on the bottom, put sliced \u200b\u200bbutter on it, then a layer of apple slices, if you want, sprinkle with cinnamon, and sprinkle with the remaining sugar again.
Bake apples with sugar in an oven preheated to 190 degrees for 40-50 minutes. Then pull out and leave for 10 minutes. During this time, make the dough. Whisk the eggs in a bowl with 3 tbsp. l. sugar, add flour and beat until smooth. Pour the dough over the apples and put in the oven for 10 minutes at a temperature of 220 degrees. Check readiness with a wooden toothpick, it should come out of the dough dry.
Let the cake cool in the pan, then cover with a plate and invert. Enjoy!
